Category Expansion

Bachan's, the California-based Japanese Barbecue Sauce brand, is stepping outside its core sauce lineup for the first time with the launch of Bachan's Japanese Mayos — a three-SKU condiment line now available exclusively at Whole Foods Market locations nationwide. The products hit shelves October 26, 2026, retailing at $8.99 for an 11.2-fl-oz bottle.

The new line spans three flavor profiles: Original, Spicy, and Black Garlic. All three are built on a base of free-range egg yolks and real rice vinegar, positioning them alongside the growing tier of premium, ingredient-forward condiments competing above mass-market mayo at retail. The Spicy variety adds cayenne heat, while the Black Garlic SKU leans on aged, cured black garlic for a deeper umami note.

Why It Matters

The mayo category is a logical adjacency for a sauce brand with Bachan's distribution footprint. Condiment diversification has become a standard growth lever for specialty sauce makers — particularly those with a loyal consumer base built around one anchor SKU — and the Whole Foods exclusive gives Bachan's a controlled launchpad in a channel that skews toward premium, clean-label foodservice-adjacent products.

"We've spent more than four years perfecting our Bachan's Japanese Mayos," said Justin Gill, founder and CEO of Bachan's. "Whether you're dipping, drizzling, spreading, or mixing, our Japanese Mayos are made to make every bite better." Gill, who founded the company in 2013 and launched the flagship Original Japanese Barbecue Sauce in 2019, has built the brand around non-GMO ingredients and cold-filled production without preservatives or artificial flavorings.

For c-store operators and foodservice buyers, the Bachan's mayo launch is a signal worth tracking. Japanese-inspired condiments — including Kewpie-style mayo and sriracha-mayo blends — have been gaining traction as dispensed beverage and roller-grill programs evolve toward more globally influenced flavor profiles. Bachan's entry at the premium retail tier validates the category's upward trajectory and could accelerate private-label or branded condiment conversations at the channel level.

What's Next

The Whole Foods exclusivity window is a common test-and-learn strategy before broader retail expansion. Bachan's has not announced a timeline for additional retail distribution, but the brand's sauce line has previously expanded from direct-to-consumer origins into conventional grocery and club channels — a pattern that suggests the mayo line could follow a similar rollout trajectory. Operators sourcing premium condiments for foodservice programs should monitor whether the line moves into broader food-service or club formats over the next 12 to 18 months.
