Chicken sandwich orders at Chili's Grill & Bar have risen 175% since the chain launched its Big Crispy platform in April 2026, a gain the Dallas-based casual-dining operator is now pressing with a new limited-time extension: the Chicken Parm Big Crispy, rolling chainwide on Oct. 20.

The new build tops the existing Big Crispy base with Chili's viral Fried Mozzarella and marinara sauce. It's served with fries, white cheddar mac & cheese, and sides of marinara and house-made ranch. The 175% lift in sandwiches sold per restaurant per day — measured through the end of Chili's Q4 fiscal 2026 in June — underscores how much runway the chicken sandwich category still holds for sit-down chains competing on value and menu theatrics.

Staged Market Rollout

Before the nationwide release, Chili's gave first access to locations in Florence, Ky.; Rome, Ga.; and Venice, Fla. — three American cities with Italian-sounding names chosen to amplify the chicken parm conceit. The three restaurants offered commemorative plates to the first 150 guests to order the sandwich at each location. The soft-launch strategy mirrors a tactic increasingly common in foodservice program rollouts, allowing operators to gauge order flow and back-of-house execution before full deployment.

"We've loved seeing how guests responded to the Big Crispy, and it got us thinking about how we could build on that with flavors we know they already love," said George Felix, chief marketing officer and executive vice president of Brinker International, Chili's Dallas-based parent. "A Big Crispy topped with our fan-favorite Fried Mozz and marinara is craveable, over the top in all the right ways and unmistakably Chili's."

Menu Platform Strategy

The Chicken Parm Big Crispy follows a playbook Chili's has executed successfully with its Triple Dipper, where Fried Mozzarella — the Nashville Hot Mozz variant of which won a 2025 MenuMasters Award for Best New Menu Item — became a viral social media driver. By migrating that same Fried Mozz component onto a chicken sandwich, Chili's is cross-pollinating its highest-traffic appetizer into the entrée tier, a menu engineering move that limits incremental prep complexity while broadening perceived novelty.

For operators tracking restaurant foodservice trends, the Big Crispy's 175% order-count growth is a notable data point in the ongoing chicken sandwich arms race. QSR chains have long owned the handheld chicken segment, but casual-dining incumbents with established kitchens and dine-in traffic are increasingly competing on differentiation — cheese pulls, signature sauces, and platform extensions — rather than price alone. Chili's operates 1,600 restaurants in 29 countries and two territories, giving any successful limited-time offer meaningful national scale from day one.

Nationwide availability begins Oct. 20, though the chain notes guests will need to request the Chicken Parm Big Crispy directly from a team member, suggesting it is not yet fully integrated into standard menu boards — a distribution wrinkle worth watching as the LTO matures.
