Chef-driven fried chicken has arrived on the NBA concourse circuit. Delia's, a new fast-casual concept built around crispy fried chicken, grilled chicken sandwiches and JoJo fries, opened at Cleveland's Rocket Arena in time for the Cavaliers' first preseason home game of the 2026-27 season. The concept is the arena-specific offshoot of Cordelia, the East 4th Street Cleveland restaurant led by three-time James Beard Award nominee Chef Vinnie Cimino and proprietor Andrew Watts.
The location sits on the Street Level concourse near Portal 26 — positioned to capture foot traffic on the way into the bowl — and will operate during Cavaliers home games and select arena events. It marks Rock Entertainment Group's latest push to anchor its venue food-and-beverage program around locally recognized operators rather than national concession defaults.
The Menu
Delia's menu is deliberately tight, engineered for high-volume throughput without sacrificing kitchen identity. The core offer is Buckets — mix-and-match drumsticks or boneless thighs in two- and three-piece orders, served with pickles and hot sauce mayo alongside JoJo fries. Sandwiches, branded as Handys, include a fried chicken version finished with Chef Cimino's Magic Dust, wavy pickles, coleslaw and black garlic mayo; a miso-marinated grilled chicken option; and a Midwest Polish Boy, a nod to a Cleveland street-food staple. House-made sauces — black garlic mayo, hot sauce mayo, Fancy Sauce and Cleveland ketchup — round out a build that leans into regional identity at every touchpoint.
"Delia's is Cordelia made faster and more casual, but with the same heart," said Chef Vinnie Cimino. "We wanted to cook food that people can spot from across the concourse, get in their hands quickly and still feel like they're eating something made with real care."
Why It Matters for Foodservice
The move fits a broader pattern in venue foodservice: sports and entertainment operators increasingly seek credentialed local restaurant partners to differentiate against the generic concession experience that has long defined arena eating. For foodservice operators and distributors watching the channel, Delia's represents the supply-chain and execution challenge that comes with translating a full-service restaurant into a high-volume, limited-menu counter concept — the kind of build-out that requires menu engineering discipline and back-of-house simplicity that fine-dining kitchens don't normally train for.
Watts framed the opportunity in exactly those terms. "The concession experience is usually pretty transactional, and we saw a chance to change that," he said. "We wanted Delia's to feel like a real neighborhood chicken joint that just happens to live inside the arena."
Chris Kaiser, Chief Marketing Officer for the Cleveland Cavaliers and Rock Entertainment Group, said the partnership deepens the venue's commitment to Cleveland brands. Cordelia has operated steps from the arena on East 4th Street since 2022, meaning a portion of the Delia's target customer was already a known gameday visitor to the flagship restaurant before or after tip-off.
For the broader foodservice-at-venue segment, the fried chicken category continues to outperform other protein formats in fast-casual and limited-service settings — a dynamic that makes a focused chicken-and-sides menu a defensible choice for high-traffic, time-compressed eating occasions. Operators tracking chef-driven concession partnerships will find the Delia's model — pared-down menu, house sauces, regional storytelling — a useful case study in translating restaurant equity into a counter-service format.
