Danone USA has backed a new professional resource designed to move fermented foods — yogurt, kimchi, miso, sauerkraut — from the research literature into clinical recommendations and foodservice menus. The toolkit, developed by The Center for Food and Beverage Leadership at The Culinary Institute of America with nutrition science support from Danone USA, received scientific review from researchers affiliated with Stanford Medicine's Nutrition Studies Research Group.
The publication, titled The Fermented Foods Toolkit: Translating Emerging Science into Delicious, Everyday Eating, targets healthcare professionals, chefs, and foodservice operators who want evidence-grounded frameworks for incorporating fermented foods into patient guidance and menu development. It is part of Danone's two-year commitment as a founding exhibitor of the Food is Life, Food is Health initiative, a collaboration between the Culinary Institute of America and Stanford Medicine.
What's in the Toolkit
The resource bundles three practical components. Visual learning tools clarify common points of confusion — including why pickled foods are not automatically fermented foods and how prebiotics differ from probiotics, distinctions that matter when foodservice operators make merchandising or menu claims. Recipe applications cover flavor-forward uses for yogurt, kimchi, and miso in dressings, sauces, and grain bowls, giving back-of-house teams a starting point for culinary adoption. A third section addresses culturally diverse fermented food traditions, with guidance on adapting recommendations to varied tastes, budgets, and community needs — a practical concern for healthcare foodservice directors and institutional foodservice programs.
"We heard from professionals that the challenge is not simply finding nutrition information — it's having the time, confidence, and practical tools to turn that information into guidance people can use," said Kristen Rasmussen, MS, RDN, Program Director of Food is Life, Food is Health and Assistant Director of Health and Sustainability Programs at the Culinary Institute of America. "Those needs directly informed the resource so professionals can move more confidently from discussing the science to applying it."
The Yogurt-Diabetes Link
The toolkit also addresses the connection between yogurt consumption and type 2 diabetes risk reduction, including the FDA's first qualified health claim for yogurt — a designation the agency granted following a petition filed by Danone. For operators running dispensed beverage and grab-and-go dairy programs, the FDA claim gives category managers a regulatory anchor for health-oriented positioning at the cooler door.
"This resource represents an important step in our two-year Food is Life, Food is Health commitment," said Amanda Blechman, RD, Director of Nutrition and Scientific Affairs at Danone USA. "By supporting science-based tools that can be used in clinics, kitchens, and communities, we hope to make evidence-based nutrition more accessible for the people and communities these professionals serve."
Fermented foods occupy a growing share of refrigerated foodservice SKUs, driven partly by consumer demand for functional ingredients and partly by healthcare system interest in dietary interventions for metabolic disease. For c-store operators expanding fresh and refrigerated foodservice programs — particularly those carrying yogurt-based snacks and probiotic beverages — resources that arm dietitians and chefs with credible talking points can support category advocacy upstream from the retail shelf. The toolkit is available as a free download through the Food is Life, Food is Health platform.
