A customer-submitted flavor has cleared the bar few limited-time offers reach: a permanent menu slot. Kolache Factory, the 60-unit Katy, Texas-based bakery-café franchise, announced this week that its Birria Kolache will stay on the menu systemwide after a 30-day April 2026 limited-time run that broke the brand's own sales records for a Flavor of the Month offering.

The LTO Numbers

During its single month on the menu, the Birria Kolache moved 43,523 units across all 60 stores — averaging more than 10,000 per week and posting 1.8 times the per-store, per-day volume of a typical Flavor of the Month. Those results were enough to make it the No. 1 Flavor of the Month by sales in the brand's history and to trigger a permanent menu decision, which the company says has never happened before with a contest submission.

The Birria Kolache is priced at $4.98 (prices may vary by state). The filling — slow-braised birria beef, onions, cilantro, and lime — is baked into Kolache Factory's signature Czech-style dough along with the consommé, rather than served on the side for dipping. That format converts a traditionally bowl-served dish into a handheld, grab-and-go item, which fits squarely in the convenience-adjacent daypart where kolache chains do most of their volume: morning and midday drive-through traffic.

What's Behind the Move

The flavor originated from Erin Hargett of Greenville, South Carolina, who entered Kolache Factory's annual Create a Kolache Contest, now in its eighth year. Contest submissions normally earn a spot as a limited-time Flavor of the Month; this marks the first time a submission has converted to a permanent listing.

"The Birria Kolache is exactly what our Create a Kolache Contest is all about," said Dawn Nielsen, COO of Kolache Factory. "A customer brought us a bold idea and our team brought it to life, and guests responded in a big way. When a limited-time flavor performs like this and customers keep asking for it, we listen."

The decision reflects a broader dynamic playing out across foodservice and convenience-channel bakery programs: operators are leaning harder on consumer co-creation and limited-time offers to surface winning SKUs before committing to permanent real estate on a menu board. For a 60-unit franchise system, a flavor that runs at 1.8 times category average is hard data to argue with.

Broader Channel Context

Birria — the slow-braised Mexican beef dish — has been one of the most durable trend proteins across quick-service and c-store foodservice programs over the past several years, graduating from viral social media content to mainstream QSR menus. Kolache Factory's handheld format addresses a genuine convenience gap: birria's traditional dipping component makes it difficult to eat in a car or at a desk, a friction point the baked-in consommé approach eliminates.

Kolache Factory operates 60 stores concentrated in Texas and surrounding markets and positions its drive-through format as a fast-casual alternative for breakfast and lunch dayparts. The brand has been recognized by Food Network as one of the top five drive-throughs in America and by Modern Baking Magazine as one of the top 50 foodservice bakeries in the U.S.

The Birria Kolache is available now at all Kolache Factory locations.
