The specialty pizza — built on the chain's signature Buttercrust with Italian beef, sausage, and giardiniera — originally debuted as a restaurant exclusive during Italian Beef Month in May and sold well enough to earn a second act in the shipped-frozen channel.
The 70-location chain, which operates in the Chicagoland area, Arizona, and Wisconsin, has long run a parallel mail-order business alongside its dine-in and carry-out footprint. Extending a high-interest limited-time offering into the e-commerce channel is a proven tactic for regional chains looking to monetize brand equity beyond their trade area — and for convenience and foodservice operators watching the space, it signals how LTO velocity can be sustained past a single daypart window.
The Build
The pizza was developed in collaboration with Jeff Mauro, the Emmy-nominated Food Network host and Chicago-based chef who markets his own Mauro Provisions condiment line. The topping set layers Mauro Provisions Italian Beef — produced exclusively with Certified Angus Beef — over Lou Malnati's house sausage blend, vine-ripened tomatoes, and Wisconsin mozzarella. A proprietary Honey G Pepper Relish, made from finely diced Mauro Provisions Medium Craft Giardiniera and Grade A honey, finishes the pie with what the brand describes as "crunch and sweet heat."
