Noodles & Company is rolling out Baked Cheese Tortelloni as a limited-time entrée starting Aug. 5, leaning into back-to-school dinner fatigue with an oven-finished pasta dish designed to compete with home cooking on comfort without the prep time. The Broomfield, Colo.-based fast-casual chain operates more than 390 restaurants nationwide.

The new entrée features cheese-filled tortelloni layered with marinara, topped with mozzarella and Italian herbs, and baked until browned — a format the chain positions as scratch-feel convenience. It joins existing oven-baked menu items including Baked Chicken Parmesan and Roasted Garlic Cream Tortelloni.

The Consumer Research

Noodles paired the launch with proprietary survey data, conducted by Ruder Finn in June 2026 via Pollfish among 1,000 U.S. parents with at least one child under 18 at home. Nearly two-thirds of respondents said family meals provide meaningful quality time, yet roughly the same share reported that meal planning, grocery shopping, and cooking add to their daily mental load during the back-to-school period. Sixty-six percent said they miss being able to enjoy a relaxing dinner, often spending the meal mentally running through their to-do lists instead.

The data point matters for the broader fast-casual and foodservice channel: dinner daypart traffic has been a persistent pressure point as operators compete with grocery meal kits, delivery aggregators, and the recurrent narrative of consumers trading down. Chains that can credibly own the "effortless comfort" message during high-stress calendar moments — back-to-school, holidays — have historically seen LTO attach rates outperform their everyday menu mix.

Loyalty & Operator Context

Noodles is also using the LTO window to drive Noodles Rewards enrollment. New members receive a free regular entrée after a first purchase of $10 or more; members earn points on every order and receive early access to new menu items. Loyalty-linked LTO mechanics have become a standard fast-casual growth lever — tying a limited-time item to a sign-up incentive generates both trial and first-party data on dinner-daypart guests.

For convenience and foodservice operators watching fast-casual traffic patterns, the Noodles move underscores a broader shift: oven-finished, restaurant-quality pasta formats are gaining traction as a differentiator in the prepared-foods aisle. C-store foodservice programs competing in the dinner daypart — particularly those with hot-case or made-to-order back-of-house capability — face the same family-dinner opportunity Noodles is targeting. As NACS data has shown, evening daypart capture remains one of the largest untapped revenue windows for forecourt retailers with an expanded foodservice program.
