The Program

P.F. Chang's is adding a structured weekday Happy Hour and a redesigned beverage program across participating locations, moves that signal a deliberate push to capture afternoon daypart traffic at its 300-plus restaurants in 23 countries. The new Happy Hour runs Monday through Friday, 3 to 6 p.m., in the bar and on the patio, with $6 select beer and wine, $9 cocktails, $12 full-size appetizers, and a new $15 Sushi & Sip pairing.

The Sushi & Sip offering — a Spicy Tuna or California Roll paired with Sapporo or a single-serve Joto One "Graffiti Cup" Sake — anchors the bar push. The chain is also introducing a sake category and a $12 Japanese whisky selection featuring Toki, Mars Iwai 45 and Nikka Coffey Grain, served on the rocks, neat or as a highball. Japanese Wok-Fired Calamari with Fresno peppers and wasabi aioli rejoins the year-round bar menu after previous limited-time runs.

The Wine Angle

The redesigned wine list is organized by flavor profile — Sparkling & Refreshing through Full & Bold — rather than by varietal, a format operators in both full-service and foodservice-forward convenience settings have increasingly adopted to reduce guest friction at the point of order. Pairing suggestions now appear beside select dishes on the main menu. Seven Daughters Moscato, for which actress Taraji P. Henson serves as strategic advisor and creative collaborator, lands by the glass and by the bottle, suggested alongside the chain's Dynamite Shrimp. New wine additions include Gratien Meyer Crémant de Loire Brut Rosé, Belle Glos "Las Alturas" Pinot Noir, Stags' Leap "Aveta" Sauvignon Blanc, Penfolds Max's Shiraz and DAOU Cabernet Sauvignon. A Wine Wednesday promotion offers half-price bottles of wine, Champagne and sake all day for dine-in guests 21 and older.

"Happy Hour should be an opportunity to experience what our kitchen does best," said Steve Solis, VP of Culinary at P.F. Chang's. "With full-size appetizers and the new Sushi & Sip pairing, we're putting the food front and center and giving guests a reason to make us part of their weekday plans."

Menu Permanents

Three limited-time entrées are now permanent in an expanded Chef's Favorites section: NY Prime Strip Steak Tataki with yuzu ponzu and togarashi aioli; Lobster & Prawn Fried Rice with cremini mushrooms and lobster sauce; and Oolong Chilean Sea Bass, a tea-marinated wild-caught fillet with shishito peppers and ginger-soy sauce. Sushi additions include Spicy Tuna Crispy Rice, Tiger Roll, Philly Roll and a shareable Sushi Boat. Lobster & Prawn Fried Rice and Oolong Chilean Sea Bass are also available for takeout and delivery, extending off-premises revenue for those SKUs.

For operators and beverage program managers tracking how casual-dining chains compete for the afternoon occasion, P.F. Chang's weekday daypart play — structured price points, celebrity wine placement, a dedicated sake category — reflects the broader industry effort to lock in the 3-to-6 p.m. window before it migrates to competitors. Seven Daughters Moscato, according to data cited by Terlato Wine Group, holds the No. 1 selling Moscato position in U.S. on-premise establishments per Somm.ai.
