Puratos USA is rolling out two ready-to-use bakery mixes — ProteinPro Strength and ProteinPro Flex — designed to help commercial bakeries add protein and fiber to everyday bread items without the texture and flavor penalties that have historically slowed protein fortification in the category. The launch targets industrial bakeries and retail-channel suppliers, including those feeding c-store foodservice programs with branded or private-label buns, rolls and flatbreads.

ProteinPro Strength is engineered for breads, rolls and bagels where volume and softness are non-negotiable. ProteinPro Flex handles the more format-flexible end of the menu — buns, flatbreads and other staples where dough extensibility matters. Depending on formulation, finished products can qualify under FDA definitions as a good or excellent source of both protein and fiber, giving operators a clean on-pack claim without reformulation complexity.

Why It Matters for C-Store Bakery

Protein-forward positioning has moved well past sports nutrition and specialty aisles. Puratos' own Taste Tomorrow consumer research puts the share of shoppers actively seeking more protein at 60%, a figure that tracks closely with broader category data showing functional attributes — protein, fiber, reduced sugar — now rank alongside price and taste as purchase drivers in the bakery segment. For c-store operators building or refreshing a foodservice program, that shift creates a straightforward upsell story on items already anchored to the hot-food case: the breakfast sandwich bun, the flatbread wrap, the roller-grill hot dog bun.

The formulation challenge has been real. Protein ingredients — whey, pea, soy isolates — affect water absorption and dough rheology in ways that can wreck processing consistency at commercial scale. "Protein affects water absorption, dough handling and finished-product quality. ProteinPro helps bakers spend less time troubleshooting and more time meeting demand."

Supplier Angle for Operators

For single-store operators and regional chains sourcing baked goods through broadline distributors or direct from commercial bakeries, the practical implication is faster availability of protein-labeled SKUs that don't require menu or supplier changes. Bakeries using the ProteinPro platform can bring fortified versions of existing items to market without retooling production lines — reducing the lead time between trend identification and shelf placement. That speed-to-shelf advantage matters in a channel where bakery and dispensed-beverage attachment rates increasingly depend on nutritional differentiation at the point of decision.
