The Launch

Toufayan Bakeries, one of the largest family-owned specialty bakeries in the United States, is rolling out Simply Sourdough — a line of hearth-baked pita breads made with natural sourdough fermentation and no preservatives — at major retailers nationwide. The Ridgefield, N.J.-based company says it is the only national brand offering a sourdough pita, positioning the launch at the intersection of clean-label demand and the fast-growing fermented-bread segment.

The line debuts in three SKUs: a 4-count, 14.1-oz Simply Sourdough Hearth Baked Pita; a 6-count, 14.8-oz pre-sliced Simply Sourdough Mini Pita; and a 20-slice, 7.05-oz Simply Sourdough Pita Bites format suited for snacking and dipping. All three are preservative-free, non-GMO, vegan, and certified kosher pareve.

Category Momentum

The timing tracks a measurable shift in the packaged bread aisle. Circana data show sourdough bread unit sales up 30% year over year, and Mintel's 2025 U.S. Packaged Bread Report finds consumers increasingly associating sourdough with simple ingredients and digestive health benefits. That confluence of gut-wellness interest and ingredient transparency has made sourdough one of the few ambient bread subcategories posting consistent volume gains — meaningful context for c-store buyers evaluating grab-and-go bakery sets and foodservice program bundling opportunities.

Karen Toufayan, Vice President of Marketing for Toufayan Bakeries, framed the launch as a centennial callback rather than a trend play. "Our grandfather built this business 100 years ago by nurturing natural sourdough starters made from just flour and water," she said. "We're proud to share that timeless approach with a new generation of consumers looking for simple ingredients and restaurant-quality bread at home." The company was established in 1926 and operates as a third-generation family business.

C-Store Relevance

For convenience operators, pita's natural pocket and hand-held format make it a practical fit for grab-and-go fresh food sets — ready to pair with deli proteins, hummus, or other back-of-house prepared items without added assembly time. The mini and bites formats in particular align with snacking occasions that drive impulse sales at the cooler and deli counter. As operators look to elevate fresh-food credibility with ingredient-aware shoppers, a clean-label, nationally recognized pita brand entering retail distribution could ease category assortment decisions for buyers managing limited shelf space.

Sourdough's wellness halo also fits neatly alongside the broader better-for-you snacking trend that NACS data have flagged as a consistent driver of inside-sales comp growth at chains investing in fresh and better-for-you sets. Single-store operators competing on fresh differentiation may find the line's non-GMO and preservative-free credentials useful shelf-talker fodder in markets where health-oriented shoppers are an addressable audience.
