Walk-On's Sports Bistreaux is cutting its restaurant footprint nearly in half with a next-generation prototype that runs 3,500 to 4,500 square feet — down from the brand's traditional 7,000-to-8,000-plus-square-foot format — and is designed to give franchisees more site flexibility without sacrificing the full menu or sports-bar energy that define the chain.

The first location built to the new spec will open on Perkins Road in Baton Rouge in early 2027, spanning approximately 3,688 square feet with seating for 125 guests. Madrid-based restaurant design firm Livit developed the interior, and Walk-On's released official renderings today.

The 'Kit of Parts' Model

Rather than a single fixed layout, the prototype is structured as a modular "kit of parts" — franchisees can select or layer in elements based on local market conditions, site configuration and operator preference. Core features include a large-scale TV wall with an upgraded A/V package, a peninsula-style bar that can adapt to different floor plans, a flexible lounge that doubles as overflow dining on game days, a patio TV wall for outdoor sports viewing, and localized wall graphics spotlighting area high schools, athletes and community touchpoints.

Back-of-house changes are equally significant for unit economics. The new kitchen package introduces clamshell grills designed to simplify crew training, improve ticket-time consistency and hold down labor costs — all without narrowing the menu. A dedicated third-party delivery pickup zone, positioned near the host stand with labeled cubbies for Uber Eats, DoorDash and similar services, addresses a persistent pain point in casual dining: off-premise order fulfillment that disrupts the dine-in guest flow.

Proof of Concept

"We wanted to rethink what the Walk-On's experience can look like without losing what makes us Walk-On's," said Brandon Landry, CEO and co-founder of Walk-On's Sports Bistreaux. "The new design gives our franchisees more flexibility in where and how they build, while keeping the energy, hospitality and community connection our guests know and love."

The brand isn't starting from scratch on compact-format operations. Its roughly 3,700-square-foot inline location at The Battery Atlanta mixed-use development served as an early proof of concept, demonstrating that Walk-On's could deliver the full menu and atmosphere in a tighter envelope. The new Baton Rouge build is the first purpose-designed execution of those learnings.

What It Means for Growth

The smaller footprint broadens the types of real estate Walk-On's can realistically pursue — end-cap retail centers, mixed-use developments and inline strip-center bays that would have been impractical under the legacy format. For a chain with more than 80 locations that is actively chasing top-500 franchise rankings in trade publications including Restaurant Business and Franchise Times, the ability to fit more site types widens the development pipeline considerably.

Smaller prototype development is a broader trend in full-service and sports-bar casual dining, as operators work to offset construction cost inflation and tighter lending conditions for franchisees. Chains that can hit their unit economics in a smaller box — through leaner kitchen equipment, tighter labor models and stronger off-premise revenue — are finding more willing franchise development partners than those locked into large, ground-up builds.

Walk-On's has celebrity investor backing from Drew Brees, Dak Prescott, Derrick Brooks and college football coach Dabo Swinney, which continues to support brand awareness in new markets. Franchising information is available at WalkOnsFranchising.com.
