Baja Fresh Mexican Grill is rolling out a three-item Crispy Diablo limited-time lineup at its approximately 70 franchised U.S. restaurants, running now through October 19, 2026. The promotion centers on crispy chicken or shrimp dressed with the chain's Diablo salsa and built into a bowl, burrito, or two-taco combo — a format play squarely aimed at the lunch and dinner dayparts.

The Three Items

The Crispy Diablo Bowl layers the protein over lime rice with black beans, mixed cabbage, pico de gallo, cilantro, and a lime wedge. The Burrito wraps the same core build in a warm flour tortilla. The Taco Combo presents two corn tortillas alongside lime rice and a choice of black or pinto beans. Each format offers the same chicken-or-shrimp protein choice, giving operators a straightforward dual-protein LTO to merchandise at the counter.

Why It Matters for Foodservice

The LTO fits a broader fast-casual pattern: operators are leaning on spice-forward, textured proteins to drive trial and repeat visits during the summer-to-fall shoulder period. Crispy proteins — fried or air-crisped chicken and shrimp — have become one of the most reliable traffic levers in the Mexican fast-casual segment, competing directly with QSR taco chains that have invested heavily in the format. For Baja Fresh, now a Kahala Brands concept within a portfolio of nearly 30 brands across roughly 3,000 locations in 35 countries, the Crispy Diablo push is also a franchise-system signal: the 30-year-old brand is still capable of generating menu news that can move traffic needles at the unit level.

Logan Reves, VP of Restaurant Operations at Baja Fresh, framed the launch around protein execution and ingredient quality: "Made fresh to order, the Crispy Diablo items showcase Baja Fresh's commitment to serving premium ingredients without compromising on flavor."

Operator Takeaway

For convenience-channel foodservice operators watching the fast-casual/QSR-at-cstore competitive landscape, the Crispy Diablo rollout is another data point on where consumer taste preferences are trending. Bold heat profiles and crunchy textures are driving menu development across foodservice programs from full fast-casual chains down to roller-grill and grab-and-go sets inside the forecourt. C-store operators who have invested in made-to-order or commissary-sourced Mexican fare — burritos, taco kits, nacho bowls — are competing for the same lunch dollar Baja Fresh is targeting with this LTO.

The Crispy Diablo items are available at participating locations nationwide through October 19, 2026.
