The Menu Move

bb.q Chicken is rolling its Korean bestseller BBoom Chicken to every U.S. location on Sept. 9, betting that the four-cheese crispy wing flavor that conquered its home market can translate into domestic traffic and check growth. The launch marks one of the brand's more aggressive menu pushes since it began expanding stateside under parent company Genesis BBQ, which founded the chain in 1995.

BBoom Chicken is coated in a dry seasoning blend of gouda, cheddar, parmesan and blue cheese — a format that sidesteps the sauce-on-wing mess familiar to roller-grill and QSR operators and positions the SKU closer to a snackable, portable format. The flavor debuted in Korea last year and moved 1 million units in its first 100 days, according to a bb.q U.S. spokesperson, making it one of the brand's top sellers in its home country before the stateside export was confirmed.

Why Cheese-Crusted KFC Matters

The timing taps two durable demand signals in the U.S. foodservice channel: the ongoing premiumization of Korean fried chicken and American consumers' appetite for cheese-forward flavor profiles in snack and appetizer formats. Korean fried chicken has moved well beyond ethnic-specialty positioning — operators from fast-casual to convenience foodservice have added KFC-style items to menus as a differentiator against commodity wing programs. Cheese seasoning blends, popularized in domestic snack aisles, give the format an accessible entry point for guests unfamiliar with traditional Korean flavor builds like soy-garlic or yangnyeom.

For c-store and QSR-adjacent operators watching competitive foodservice programs, the BBoom launch illustrates how emerging chains are leaning into global menu successes as proof-of-concept before committing to stateside R&D budgets. The 1-million-unit data point from Korea functions as both a demand signal and a marketing asset.

Opening-Day Activation

To drive trial, bb.q is offering free delivery on all orders placed through its online platform and mobile app across all locations on Sept. 9. The brand's New York City K-Town unit is hosting a weeklong birthday event — tied to mascot ChiBBoQ's birthday — running Sept. 9–15, 11 a.m. to 10 p.m., with sampling, activities and giveaways. Sampling activations at flagship urban units remain a cost-effective trial driver for emerging QSR brands competing for attention against established chicken chains with larger media budgets.

bb.q has been recognized by YouGov as the No. 7 Top Emerging Dining Brand and by Yelp as the No. 3 Most Loved Brand and No. 7 fastest-growing restaurant brand — metrics that point to above-average brand awareness relative to its current U.S. unit count. Whether BBoom Chicken accelerates franchisee inquiries and new-unit signings will be the more consequential measure of this launch's success over the next two quarters.
