Chipotle Mexican Grill is executing its first-ever simultaneous limited-time launch, putting a reformulated Pollo Asado and brand-new Chili Lime Chips on menus across more than 4,200 U.S. and Canada restaurants beginning Aug. 31. The pairing marks a deliberate shift in how the chain manages its LTO calendar — stacking two items with distinct consumer hooks rather than sequencing them weeks apart.

The Pollo Asado relaunch features freshly grilled adobo chicken seasoned with garlic, Mexican spices and hand-cut cilantro, then finished with real lime. The reformulation leans into a brighter citrus profile versus prior versions. Nevielle Panthaky, Senior Vice President of Culinary at Chipotle, said the citrus finish was engineered to cut through the chicken's smoky notes while setting up a natural pairing with the new chip side.

Chili Lime Chips: Fan Behavior Meets Foodservice

Chili Lime Chips trace directly to a documented guest behavior: since 2022, social-platform mentions of seasoned chips paired with Chipotle entrées have climbed more than 1,500%, with related TikTok and Instagram content generating roughly 96 million engagements. Rather than let third-party snack brands own that occasion, Chipotle formalized the hack as a made-in-restaurant item with no artificial colors, flavors or preservatives — fitting the chain's longstanding clean-label positioning.

The chips debut as a digital exclusive for Chipotle Rewards members through the app and Chipotle.com on Aug. 31, then open to all guests on Sept. 4. The loyalty-first window is a familiar traffic mechanic for the chain, which has used Rewards early access to drive app engagement ahead of broader rollouts. Chipotle is also waiving delivery fees on Pollo Asado orders placed through its own digital channels Aug. 31 through Sept. 13 — a move that keeps the transaction on first-party rails rather than third-party platforms.

For convenience retailers watching foodservice program trends, the Chipotle dual LTO is a useful benchmark in consumer appetite for protein variety and snack-entrée integration. The "walking taco" format — pouring a bowl into a chip bag — has long been a roller-grill and grab-and-go adjacency that c-store foodservice programs have tried to capture with nacho kits and chip-and-protein combos. Chipotle codifying that behavior into a permanent LTO structure signals that the format has enough mainstream pull to justify dedicated back-of-house prep and menu real estate.
