Milwaukee's Discourse Coffee is cracking Chicago. The boundary-pushing coffee brand opens its first brick-and-mortar in Fulton Market on May 4, bringing the same viral drinks and culinary coffee approach that built its name since 2017. The move comes via partnership with Taratsa Hospitality Partners at 950 W. Fulton Market, a mixed-concept dining hub that already houses Urbanbelly, Pitaki, and The Wild Hare.
Discourse made noise with drinks like the Ramen Latte and Channel Orange—a smoked, oaked orange vanilla latte spiked with blackstrap bitters. It's coffee as spectacle and substance, designed for Instagram feeds and repeat visits. Chicago gets the full menu: those signature creations, plus drip, pour-over, tea, and a new pastry program spanning sweet and savory—croissants, biscotti, the works.

William Glastris, Managing Member at Taratsa Hospitality, called the café "an extraordinary guest experience, whether you stop by for a quick latte or linger over one of Discourse's signature creations." Hours run 7:30 AM to 4:30 PM daily, with rotating seasonal menus and bi-weekly specials built to drive frequency.
Fulton Market is the obvious choice—high foot traffic, culinary cache, a crowd willing to pay for experimentation. Discourse enters a market where coffee culture has matured past commodity drip and basic third-wave, into a space where drinks double as conversation starters and social content. If the Ramen Latte plays in Chicago like it did in Milwaukee, expect lines and copycats within six months.
