Miami's on-premise beverage channel is about to get a new table-water player. Maison VIVE is rolling out what it calls the first single-use sparkling water siphon in the U.S. market, targeting restaurants, hotels, and bars in Miami this fall — with a limited-edition, hand-numbered debut run and sample requests now open.
The Format
The brand's signature bottle dispenses sparkling water through a siphon spout engineered to preserve carbonation between pours. That interactive format — guests or servers tilting the siphon to fill glasses tableside — is deliberately positioned as part of the dining ritual rather than a back-of-house utility. It's a direct play on the experiential beverage trend that has reshaped premium still and sparkling water in full-service restaurants over the past several years, where brands like San Pellegrino and Topo Chico have moved from commodity line items to named-request products.

The Go-to-Market
The Miami launch will run through the Première Pour Society, a structured founding-operator program that gives early restaurant, hotel, and bar partners product access ahead of the broader rollout, co-marketing support, and neighborhood exclusivity — a common on-premise seeding tactic for emerging beverage brands looking to build venue density before expanding regionally. Operators interested in the program can request samples from the limited-edition release directly through the brand.
The broader product roadmap sketched out by the company extends well beyond still and sparkling water. Maison VIVE has signaled plans to move into flavored waters, soft drinks, mixers, and both premium and zero-proof cocktails — categories where the convenience and foodservice channels increasingly overlap. As c-store operators continue to invest in dispensed beverage programs and foodservice upgrades, premium packaged waters and mixers have become a meaningful part of the ambient beverage cooler set, particularly in higher-income trade areas.
For on-premise operators evaluating the brand, the single-use siphon format raises practical questions around cost-per-serve versus traditional glass-bottle or filtered-tap programs — factors that matter on tight food-and-beverage margins. The neighborhood-exclusivity angle of the Première Pour Society may provide enough differentiation to justify a premium price point for founding venues, but broader adoption will depend on how the brand prices the format at scale.
