The New Lineup

The launch covers three varieties: a classic Sourdough, a Hearty Grains & Seeds option, and a Lemon Blueberry flavor aimed at breakfast-daypart differentiation. The bagels build on The Rustik Oven's existing sourdough bread platform, which uses a 12-hour fermentation process and slow baking to deliver what the brand describes as an artisan-style taste and texture in a packaged format. For forecourt-adjacent grab-and-go sets, the Lemon Blueberry variety in particular could attract morning shoppers looking for something beyond a plain round.

Sourdough's Shelf Pull

Sourdough momentum in the packaged-bakery segment is hard to ignore. A Puratos report from October 2025 found that 70% of consumers say sourdough enhances bread flavor — a data point that helps explain why brands from Thomas' to Dave's Killer Bread have added sourdough extensions in the past 18 months.
