Philz Coffee is rolling out two limited-time cold brews at all 80-plus locations in California and Chicago beginning Aug. 18, targeting the fall dispensed-beverage window that rivals routinely fill with pumpkin-spice variants. Apple Cinnamon Roll layers cold brew with caramel apple butter, Ghirardelli Vanilla Sauce, and cinnamon. Pecan Pie combines cold brew with buttery pecan toffee and cinnamon, finished with a sea-salt sprinkle — a savory-sweet profile that aligns with dessert-inspired beverage trends gaining traction across specialty coffee and convenience foodservice channels.

Both drinks are made to order using Philz's pour-over method and clean-label ingredients, with customers able to specify sweetness level and milk choice at no additional charge — a customization model that differentiates the chain from high-volume grab-and-go formats dominant in the c-store forecourt.

Pastry Program by Market

The fall menu also includes a regionally tiered pastry lineup. Northern California stores carry a Pecan Pie Kouign Amann and a Cinnamon Maple Morning Bun. Southern California and Chicago locations offer Pumpkin Bread alongside a market-specific item — an Apple Cinnamon Danish in SoCal and a Vegan Chocolate Chip Cookie in Chicago. The market-by-market pastry differentiation reflects a back-of-house localization strategy that larger convenience and foodservice operators have increasingly adopted to drive basket attachment.

The seasonal menu is available in-store, through the Philz app — which also houses the Philz Rewards loyalty program — and via third-party delivery on DoorDash and Uber Eats. For operators tracking dispensed-beverage and loyalty program trends, Philz's integrated app-and-rewards approach mirrors strategies deployed by larger convenience chains to lift repeat visit frequency during seasonal LTO windows. The Oakland-roasted, responsibly sourced bean program and grocery-channel presence in select markets give Philz additional retail touchpoints beyond its café footprint.

With specialty cold brew consistently among the fastest-growing dispensed categories — NACS data has flagged premium coffee as a top inside-sales driver for operators adding café-style programs — Philz's seasonal push underscores how independent coffee chains are competing for the same daypart dollars that c-store operators increasingly want to capture with proprietary dispensed-beverage programs.
